Ingredients:

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 carrots, chopped
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1Β½ cups vegetable broth
  • 1 tsp ground cumin
  • Β½ tsp ground cinnamon
  • Β½ tsp ground coriander
  • ΒΌ tsp cayenne (optional)
  • Salt and pepper to taste
  • Fresh cilantro or parsley, for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onions and sautΓ© 5 minutes until soft.
  2. Add garlic, ginger, carrots, zucchini, and bell pepper. Cook for 5–7 minutes, stirring occasionally.
  3. Add cumin, cinnamon, coriander, cayenne, and a pinch of salt. Stir to coat the veggies with spices.
  4. Pour in chickpeas, tomatoes, and vegetable broth. Bring to a boil, then reduce to simmer.
  5. Cover and simmer for 20 minutes, or until vegetables are tender.
  6. Adjust seasoning and serve topped with fresh herbs.
