Ingredients:

  • ΒΎ cup whole wheat flour
  • 1 tsp baking powder

  • ΒΌ cup extra virgin olive oil
  • ΒΌ cup Greek yogurt (plain, full-fat)
  • 2 tbsp honey (plus 1 tbsp for drizzle)
  • 1 egg
  • Zest of 1 orange
  • Juice of Β½ orange
  • Β½ tsp vanilla extract

Instructions:

  1. Preheat oven to 350Β°F (175Β°C). Grease a small baking dish or four ramekins.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, whisk olive oil, yogurt, honey, egg, orange zest, juice, and vanilla.
  4. Combine wet and dry ingredients. Mix until smooth.
  5. Pour into baking dish and bake for 22–25 minutes, until golden and a toothpick comes out clean.
  6. Cool slightly and drizzle with extra honey before serving.
