Spinach, tomato, and feta omelet

Ingredients

  • 2 large eggs
  • 1 tbsp low-fat milk
  • 1/4 cup chopped spinach
  • 2 tbsp diced tomatoes
  • 2 tbsp crumbled feta cheese
  • Salt and pepper to taste
  • 1 tsp olive oil

Instructions

  1. In a bowl, whisk eggs, milk, salt, and pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.

  4. Pour in egg mixture and cook for 1 minute. Add tomatoes and feta on one side.
