Ingredients

  • 4 large bell peppers (any color), halved lengthwise, seeds removed
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb lean ground turkey
  • 1 (15 oz) can lentils, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes (drained slightly)
  • 1 teaspoon dried basil
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • 1/3 cup crumbled feta cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven: to 375°F (190°C). Place pepper halves in a baking dish, cut side up.
