Seared Salmon with Dill Cream Sauce served with Cauliflower Mash

Ingredients:

  • 4 salmon fillets (5 oz each)
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

For the Dill Cream Sauce:

  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 1/2 cup heavy cream
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Zest of 1/2 lemon
  • Salt and pepper, to taste

Instructions:

  1. Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear salmon, skin side down, for 4–5 minutes. Flip and cook 3–4 minutes more, until cooked through.
  2. In a saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute.
  3. Stir in heavy cream, dill, lemon juice, and zest. Simmer for 3–5 minutes until thickened slightly.
  4. Plate salmon and spoon sauce over top. Serve with steamed greens or cauliflower mash.
