Vegan Thai-Inspired Peanut Cabbage Slaw

Ingredients:

  • 3 cups shredded red cabbage
  • 1 cup shredded carrots
  • ½ red bell pepper, thinly sliced
  • ¼ cup chopped cilantro
  • 2 green onions, sliced
  • ¼ cup roasted peanuts (unsalted), chopped

For the dressing:
